I have an order for a fondant cake this saturday...
When should I put the fondant on the cake? It is a bit hot here, but we have a/c. Would Friday be ok? And how should I store it - so the fondant doesn't get stiff or too warm?

I will do my fondant 2 days ahead and leave it out in a cake box (as long as there are not any fillings or icing that are perishable in/on cake). If you put it in the fridge, it could sweat. You guys are quite a bit more humid than us, but if you have A/C then you should be okay.
Another option is to freeze it. Put it in a cake box, wrap it in 2 garbage bags and push as much air out as possible from the bags. Then when you take it out to thaw (the night before you need it), it will form some condensation, but that will dry. Just dont touch it. Good luck!
If you have AC then you won't have to worry about the fondant cake in a cake box on your counter. Also, if you used a heat resistant BC underneath then you won't have to worry about using a cooler to deliver it. If you are traveling more than a half hour to an hour then you may just want to make sure your car is cold, IF you are using the heat resistant BC. HTH. Cat
