Best Commercial Fridge - For Fondant Covered Cakes

The space that I rent from now has a Beverage Air commmerical refrigerator and when the cakes come out they are super sticky for my fondant cakes and I can not touch them. Residential seems to dry out the fondant ( which is perfect for what I need) whereas the commercial model seems to add moisture. Would a different model work better , a Turbo air , or continental,, etc.... ? I am really wanting to do painting on my cakes and not able to do so since they end up running after they sit in the fridge.

Any suggestions would be wonderful , thanks in advance icon_smile.gif

See if it is possible to add a de-humidifier. I was told when I put in my walk-in that this can be done. Not sure about a reach-in.
