I am making a suprise 80th b-day cake in a few months and my dh wants me to use whipped ganache as the filling but the cake will not fit in the fridge.
Is ganache ok to sit out? If not is there a recipie that will taste close that doesn't need refrideration?

Yep. I use ganache quite often and I NEVER refrigerate my cakes. EVER.

I consider you an expert on ganache! I used ganache the other day and it melted because my house was so dang hot. (Heat wave here and I don't have central air.) I usually am able to have it sit for awhile at room temp so that it becomes spreadable and perfect for pipping. When the weather is hot, should it be refrigerated?
