I was just watching this video on Youtube and I loved the cake but my question is: How do you keep the top layer of foam from touching the layer of edible cake? I know this may be a dumb question, but I honestly don't know. Thanks.

The edible cake is on a cake cardboard.

Although I didn't take time to watch the video.
