I was asked to bake decorated shortbread cookies for a shower in August. I will be going on vacation during the week of the shower, and am not sure if the icing will become hard and not as tasty since they will be made 5 days prior to the event. Each cookie would be bagged. I am going to test out some cookies today, but if anyone has experience with cookie freshness, I would appreciate the feedback.

I'm not sure what recipe you are using, but most cookies can be frozen. here are some past threads that talk about freshness and freezing. I hope some of the information in them is helpful!
