Im doing a 3 tier cake in fondant for my cousin's son b-day party and she wants to have the party at a lake remind you im in NC and its hot! How would fondant hold up to the heat???

Fondant holds up better than buttercream. Nothing is going to hold up forever in the heat, though. Keeping it in the shade will help, and so will using crisco instead of butter in your buttercream.
