I have had an order for a 14 inch round rich fruit (wedding) cake but i have only got the recipe for an 11 inch cake...

Does anyone know how to upscale quantities/ recipes or have a recipe for a 14inch round rich fruit cake please?

i am cutting it very fine indeed - it needs to be ready in 6 weeks aswell (only just got order)

Hi Haveyourcake2706,

There is a formula you can use to figure this out, it is called the Formula Conversion Factor (FCF). I have learned this from a book produced by The Culinary Institute of America.

Desired Yield (14")
________________ = Formula Conversion Factor (FCF 1.273)
Original Yield (11")

After finding the FCF, you multiply ALL INGREDIENTS by this number.
