I have a couple of questions about cream cheese icing (CCI). Can you put CCI under fondant? If the cake is inside, how long can a cake with CCI stay out? I have read on here that CCI outside is a big no no, but if I cover it in fondant will it work?
I use a cream cheese buttercream (Earlene in Texas recipe) and it can stayout. I haven't used it under fondant though.
Yes you can put cream cheese frosting under fondant and yes this recipe doesn't have to be refrigerated. This is the best decorator cream cheese frosting I have found. Have been using it for ten years.
Kathyfs Cream Cheese Frosting
1 cup butter
1/2 cup Crisco
16 oz. cream cheese
3 1/2 lbs powdered sugar
1 T vanilla
1/2 tsp salt
Mix on low speed for a couple of minutes.

when a couple wants part regular cake and part cheesecake for the tiers.
This makes a fairly stiff icing. For a softer one you can use 3 lbs. of powdered sugar.
I use Hi ratio shortening in my frosting's. I no longer use Crisco in my frosting's only cookies.
