A customer is asking for a Tiger shaped sponge cake with fresh cream and jam in the middle. Whilst I need to find out how to do this, can a cake like this be done with fresh cream & jam? I'm thinking it would be too soft to decorate and that i would need to use a Madeira cake or something similar. Any help would be appreciated.
Is the cake going to be 2D or 3D? I don't fill my 3D cakes for stability reasons....but I've heard of others who do. I guess I'm chicken!
