I'm delivering a fondant covered cake filled with ganache to a nightclub for a birthday party and the club staff requires refrigerating the cake prior to serving.

Wont this make my cake sweat when they bring it out?!

I'm freaking a little bit :/

No one else can REQUIRE anything of YOUR cake. Period.

So basically stand firm and say No to refrigeration period, ok. Will the fondant handle the heat and humidity of a night club?

Thanks so much, breathing somewhat easier...

If they want to refrigerate the cake once you have delivered it thats up to them. If you have concerns then you should voice it to them, but once you've done what you can I wouldn't worry about it.

Now if they are requiring you refrigerate before you deliever it thats a different story

If you are concerned that the club will refrigerate the cake after you leave it, then don't deliver it until right as the party starts. And ask the host of the party to request that the cake be in view during the party. Then there's no way that your cake will get kidnapped and chilled.
