i am traveling to PA to celebrate my aunts 50th anniversary- i am making the cupcake tower with a topper...
i only need to make 6 dozen but i can't come up with flavors...i have too many running through my mind. there won't be any kids there...so really the sky is the limit. I would like to fill them...any ideas thoughts? any winners out there? icon_smile.gif

Last week I made my first batch of margarita cupcakes with key lime cream cheese icing. Everyone loved them!

Sorry...I just saw your request. The recipe for the cupcakes were from this site. The recipe for the icing was from the Wilton site.

Margarita Cupcakes

Ingredients

* 1 package lemon cake mix
1 (4 ounce) package instant lemon pudding mix
½ cup vegetable oil
¾ cup frozen margarita mix (thawed)
4 large eggs, lightly beaten
½ cup gold tequila
2 tbs triple sec
2 tbs lime zest

Instructions

Preheat oven to 350 degrees

Combine cake mix, pudding mix, vegetable oil,
Margarita mix, water, eggs, tequila and triple sec in a large
mixing bowl.

Beat for 2 minutes at medium speed with an electric
mixer.

Divide among cupcake pans

Bake for 15-20 minutes or until inserted toothpick in
the center comes out clean.


Key Lime Cream Cheese Icing

Ingredients:

* 8 tablespoons (1 stick) unsalted butter softened
* 8 ounces cream cheese softened
* 2 tablespoons key lime juice
* 1 teaspoon key lime zest or lemon zest
* 4-5 cups confectioners' sugar

Makes: About 3 cups.

instructions

In large bowl, cream butter, cream cheese, juice and zest with electric mixer until light and fluffy. Add 4 cups confectioners' sugar, one cup at a time; continue beating until light and fluffy. If icing is too thin add additional confectioners' sugar 1 tablespoon at a time.

They are awesome! I got an order for them the day after I took them into work. I'm making some tomorrow to take to a friends BBQ.

I second the margarita flavor, I would also suggest maybe a gingerbread cuppie w/lemon bc. garnished w/ candied lemon peel & mint leaf. that one goes good too. Have fun coming up with flavors, it is great to be able to offer many choices. icon_smile.gif
