I have ordered the SPS system and am trying it out for the 1st time this weekend...my question is...do you refrigerate your cakes once stacked...i have had some people say they do so that it is stiffer for travel but I am afraid it will dry out? What do you suggest?

I always refrigerate my cakes before delivery, makes it much easier. As long as you have buttercream/fondant covering, it will be fine and stay moist.

I don't refrigerate cakes. It can dry them out, and I don't have room anyway.

I don't refrigerate my cakes either. I transport cakes all of the time and haven't lost one yet. thumbs_up.gif
