I need 2- 10 in layers. can i mix up cake batter, put 1/2 in pan to bake approx 45 min, while the remainder of batter sits in mixing bowl. After sitting for that long will batter still come out ok after baking? THANKS
I've done it before, with no problem but it can definitely depend on the recipe. The second cake may not rise quite as high since certain ingredients that react instantly (baking soda and baking powder in particular) though. One thing I do is cover the bowl with a damp cloth or paper towel to help prevent any drying out.
But others with better baking science knowledge may be able to expand either way.

Thanks to indydebi - I now refrigerate (and freeze) cake batter. I bake the cake fresh, but if I have leftover batter, I now know how to save it!
Lucinda can you tell me where i can find more info about freezing and/or putting batter in frig? Thanks
