Well, actually I burnt my thumb, third degree burn, but I will survive. My quesrion is this...How far in advance can I bake my cupcakes? I need them for Wednesday morning and I have to do things in stages and I am really slow now that I can't use one hand. Any suggestion would be greatly appreciated. TIA

I've always found cupcakes to dry out quickly. I would say bake the day before they are due. I don't think you can have a lot of lead time with cupcakes.

I bake cupcakes no more than 2 days ahead, and then seal in a giant airtight container. After that, I fill and decorate the day before or day of then into the fridge.

If you need to bake them ahead of time, you can put them in freezer bags and then freeze them until you need them. The tops get sticky though.

Can you get a friend to help you? Trying to work with one hand is no fun.
