Cake Help!!!!!!!!

Last night i made a large chocolate mudcake (a pre mix from a cake supply store) and tested as usual before removing from the oven. I always cook so its a bit sticky on the knife so when it keeps cooking out of the oven its not over cooked.
Today when i leveled the cake there is a section that is rawish and quite muddy. WHAT CAN I DO? I dont have enough mix to make another one and it is due tomorrow, was going to cover it today

PLEASE HELP ASAP!

i've recently had something similar happen with a lemon chiffon cake, when i cut to torte, some of the very middle of the cake was not quite cooked. i too tested, i put it back in the oven for short amounts of time. i know this will dry it out slightly, but i then used a simple sugar syrup to coat the layers before torting, and everyone commented said it was delicious.
