Fondant...refrigerate Or Not

Ok so I've been watching Cake Boss on TLC and noticed that they refrigerate all their cakes, even fondant covered cakes. Yet everthing I've read says not to. You're the experts, tell me what you do?

I don't. See no need to, the sugar keeps the cake fresh.

We refrigerate all of our cakes. You have to know your refrigeration and how your fondant will react. If it's a hot humid day we may have some condensation. Don't touch the cake. It will dry and be fine.

I never refrigerate my cakes. I don't use perishable fillings so there is never a need to. thumbs_up.gif
