Unsure How To Replicate This

I am making bridal shower cupcakes.. was planning on using buttercream.. but she requested red velvet cake.. so I am using cc frosting. I usually just do cake.. so Im a little unsure of how to get such a flat surface on the cupcakes to get the decoration right.. any tips?

I'm going to throw out an idea that sounds like something I would do:

Level your cupcakes....then load up with frosting, getting the frosting as flat as you can.

Place a piece of waxed paper on the cupcake and use a fondant smoother to flatten. Leave the waxed paper on and chill the cupcake, then remove the paper.

Do the cc frosting and on top of that use fondant. icon_smile.gif

If you bake your cupcakes at 325 instead of the standard 350- they will rise much more level.

I bake at 325°, but my oven's not level so my cuppies are always wonky. I just add more icing to the shorter side and you can't tell.

I think most ovens have adjustments to make your oven level.
