Ive never frozen fondant but I would assume that as long as its wrapped tightly you could store it for a while. Im interested in what others say.

I freeze and refreeze mind over and over again. I think that longest that I've gone is 6 months, BUT that is the little bits that I use for decorations and things like that. this way I never have to mix colors, its always just the left overs from a bigger cake and I've formed a collection over time. If i'm covering a full cake I make it that morning. I'm not sure how the store bought stuff does, but I know that I don't notice any issues at all with freezing for long periods with my marshmallow/chocolate recipe

I too have frozen it for at least 6 mo. at a time or more. Make sure it is covered air tight and it lasts forever.

Thanks. I've frozen small pieces that I use for decor, but have never frozen larger amounts that would actually cover a cake. I have a lot of left-over and many not use it for a while.
