I'm doing the attached cake for a wedding this weekend. I'm going to start working on the coral today. It looks really squiggly. Do you think the coral was done in royal icing?
It looks like royal to me.
Could also be gum paste that went through a clay-extruder gun and curved and curled into shape.Just choose a method that YOU can live with.
Could be melted white chocolate candy too, which would make sense if the shells were also chocolate.
