Hello all! This is my first post and I am looking for advice from other professional bakers. I own a cupcake bakery that is becoming way bigger than I anticipated. I currently bake everything in the morning before we open. I am looking for advice on other bakeries baking schedule. Such as what hours do you have your staff work, when do you bake, what is each position responsible for? etc! I am happy to provide advice on owning and running a cupcakery, just ask! We currently bake approximately 13000 cupcakes a month. help? anyone?! Thanks!!

When I worked at a cupcake place we had an offsite kitchen and would bake up to 2 days before and then decorate the afternoon before and our boss would take them to the location the morning of.
