I like the chocolate WASC cake with ganache made with semi-sweet chocolate. Both recipes are found on this site.

For my dad's birthday one year I made 2 layers of devil's food cake and inbetween a layer of brownie. I used dark chocolate ganache as the filling. Then I iced the whole thing in chocolate IMBC and put more ganache on top.
I have one on page 7 of my gallery...Basket of Strawberries. Here's the description:
3-Layer cake consisting of 2 layers of WASC dark chocolate fudge cake with a center layer of chocolate cheesecake, covered in chocolate amaretto ganache, surrounded by chocolate fudge pirouettes, topped with chocolate covered strawberries.
Holy crap I think my blood sugar level just went up about 50 points just READING about these delicious cakes!

I've used the Planet Cake chocolate mud cake recipe several times with dark choc ganache, always gets rave reviews.
So dense and chocolately it lasts for 3 weeks after baking! perfect for weddings,(I've only done two, but gave me plenty of time to ganache and fondant days before wedding day) It freezes really well. Chocolate cake in my opinion is better after being frozen. Seems to make it more moist.
