Cakes Made On Wed - Will They Be Ok Until Saturday?

I have 3 large cakes all due on a thursday but none will be used until that saturday. Covered in fondant - if they are covered on Wednesday will they still be fresh enough for saturday? I have no room to refrigerate them - any help??

if covered in fondant they should be just fine, add some simple syrup to the layers if your worried about they staying fresh.

I always crumb coat/let cakes settle on Thursday, ice/decorate on Friday for a Saturday delivery. I have always had compliments about how moist my cakes are.

same here. People think I stay up all night the night before doing them. They are crazy LOL

I have a pick up on a Friday.. if I bake on Tues, crumb coat on Wed, and finish decorate on Thurs will it be ok for Sat? (work full time so only have very little time in pm to work) What do you advise about prebaking/freezing cakes?
