How Long Do Cupcakes Stay Fresh??

Hey guys,

ok I am having a huge party on saturday and I am doing a cupcake bar. I think i will make about 300 cupcakes last night i started and made about 125 and i had them in big aluminum pans (like the ones you use for partied that you put in the metal catering racks) cooling because I was going to wrap them and freeze them. I put covered each pan but I fell asleep before I could get them in teh freezer. My question is since the party is on saturday which is only 3 days away would i still need to freeze them or can they stay covered in the pans and then be frosted the night before??? they were still nice and soft this morning when i checked. I just dont want them to get dry or hard.

any advice will be great TIA

Umm...3 days for a cupcake is kind of a long time in my opinion. I'd go ahead and freeze them. The freezer will actually make them more moist. Just give them plenty of time to thaw BEFORE you frost them.
