I agree with the cake ball idea. I don't follow the cake ball recipe. I just mix the cake and some of the leftover icing. Put them in the freezer and then you can take one out at a time and have a sweet snack!
And you can take the balls and dip them into chocolate for another variation.
Some roll them and use them like bon bons while others have put them on sticks for a pop.

I've made cake balls and what my husband calls cake sandwiches (filled cake, no icing on outside) with leftover cake parts. I like the trifle idea. I'll have to add that into my idea compartment in my brain.
layer the cake scraps with pudding and put cool whip on top. Quick easy dessert if you have company show up and weren't expecting it! I also add in a layer of filling if I have some leftover.
I use cream cheese in my cake balls rather than the frosting. I am in love with cream cheese and it is far less sweet.
My trifle recipe: Layer cake trimmings, canned fruit (any kind you like, including the juice, but try to distribute the juice evenly as you can), cool whip, more cake, more fruit & juice, more cool whip. Great quick dessert!
or you can just freeze the bits for when you decide what to do... thats what i do when i have a whole lot of cake. always end up using it for something. =)
My grandson calls these "cake skins" - I have NO idea where he came up with that term, but he is always on the lookout for them when he is here!
My Son in law uses them to make cake milkshakes.....just throws them in the blender with the icecream and milk. He loves them, especially with WASC cake skins.
I don't get a chance to do anything with my cake leftovers. They get eaten by my husband as soon as I have them. If I bake the cake and don't cut it right away he will ask, why haven't you cut up the cake yet!! LOL
