I usually make WASC cakes (or the chocolate version). I have a request for a carrot cake. Anyone know what type of pudding to add and be able to maintain the carrot cake flavor??? Thanks in advance!
Carrot cakes, as Alton Brown explains, are really basically giant muffins. You should not use a variation on the WASC for carrot cake. Make this cake from scratch. It's the only way to get a really good carrot cake (and anyone who says otherwise is dead wrong). Because it's basically a muffin, carrot cake is actually the easiest scratch cake to make.

8 out of 10 requests that I get are for carrot cake. I tried to vary my recipe, and once used Paula Deen's Carrot Cake recipe. Had to throw it out and make my standard. It is definitely a winner. It is on this site...Yummy Carrot Cake from a Mix. Even though it may not fit Alton Brown's definition (really a muffin), it has never, never let me doewn in over 30 carrot cakes so far this year!
The tastiest carrot cake I've ever had is the Citrus Carrot Cake in the recipe section here on CC. It's a kind of long scratch recipe, but well worth it!
