I am making a cake in a few weeks with crusting cream cheese icing for a friend. Can I color it or will that throw off the consistency? I need it to be red. Or will it be really gross and should I just keep it as is and convince my friend to let me cover the cake in red fondant instead? Also, how far in advance can I make it if I keep it in the fridge? Thanks.

Yes, you can color it.

Are you making just the icing ahead or are you asking how long the cake can be kept in the fridge?

Thanks. I meant the icing itself. I work full-time, so to save some time, I was hoping to make it the weekend before. I'm assuming it would still be ok?
