I am making a cake in a few weeks with crusting cream cheese icing for a friend. Can I color it or will that throw off the consistency? I need it to be red. Or will it be really gross and should I just keep it as is and convince my friend to let me cover the cake in red fondant instead? Also, how far in advance can I make it if I keep it in the fridge?
