Tonight, I have to re-bake a layer of a cake I am doing. Problem is, I only have extra large eggs in the fridge and I made all the other cakes with large eggs. My car is in the shop and I won't have access to the store until after 11 tonight. I need 6 eggs. Should I only add 5? I am a real stickler about only using large eggs in my recipes, so now I'm stuck needing to bake off this cake, asking a newbie question. Hrmmmppphh.
According to my cookbook's substitution chart, five eggs should be perfect. Good luck.
