I have seen the serving chart before but it's not all that accurate.

From experience do you think you can get 75 - 80 servings out of a two tier, fille, round 8 inch and 10 inch?

no way. 8-10 would serve like 45 - large slices
a 12 - 10 would be 75 - large slices

8" + 10" = 62 servings
8" + 12" = 80 servings
... by my charts. This if with 4" high teirs, and you cut them 1" x 2" (x 4"). In my opinion, this is a large piece of cake. Nobody has ever complained about not having enough cake to me regarding my estimates.
