I tried it and it pulls the fondant a little, making wrinkles in the piece....any suggestions?
how thick should I roll it out? should I let it dry a little before cutting? refrigerate it?

It should be rolled out pretty thin. Also I put mine in the freezer for about 30 mins while I am getting my design ready and it cuts perfectly.
