Best Royal Icing Recipe For Stenciling On Fondant?

Anyone have a tried and true good royal icing recipe to use for stenciling on a fondant cake. I would prefer meringue powder over egg whites, and it needs to stand up to humidity.

Hi....

The best one is with real egg whites.... not with merengue powder.... the consistency is really good for stenciling because it kinda hold the paste together... you can google it...

Here you go.... makes 3 cups... (make sure when you cover it.... use saran wrap touching the RI... so it doesn't crust on you....

Royal Icing Using Egg Whites:

2 large (60 grams) egg whites

2 teaspoons fresh lemon juice

3 cups (330 grams) confectioners (powdered or icing) sugar, sifted


The other one...in case u want to save them both...
Royal Icing Using Meringue Powder:

4 cups (440 grams) confectioners' (powdered or icing) sugar

3 tablespoons (30 grams) meringue powder

1/2 teaspoon extract (vanilla, lemon, almond)

1/2 - 3/4 cup (120 - 180 ml) warm water

Note: Food Coloring (I use Gel Pastes that can be found at cake decorating and party stores or else on-line)
