I'm trying to figure out a recipe for cupcake icing similar to a local bakery and need some help! It is a buttercream but tastes different than any buttercream I've had before. It is gritty...but in a good way...so that is what makes me think it is made from granulated sugar instead of powdered sugar. I am positive there is no Crisco or Criso-like ingredient...the bakery states this. It crusts really well and is light and creamy. I don't know how else to describe it! If anyone has any ideas or experience with a similar buttercream, please do share! Any and all input will be appreciated! Thanks in advance!
I'm guessing you want a cooked roux frosting like this one.
