Cruise Ship Cake Tutorial Or Advice?

My little boy (who is turning 5) wants a cruise ship cake for his b-day, as he LUVS these floating hotels, as he calls them! He was watching Ace of Cakes with me when they made the Carnival ship and wants one like that (swimming pool, maybe even slide, and all). Though, the show did not explain how they did everything.
Now this is a bit of a challenge for me, though I am sure I can pull something off... I would really appreciate some help! I am thinking of carving from 3 (?) stacked 9X13s? more? And 2 8 inch squares?Anyone made one and want to share? I was hoping he just wanted a hot wheels car cake, but cest la vie....

I made one for a Dr. I work with. It was the first time I had ever carved a cake before.

I should have done the whole thing in fondant but I was being lazy. It was a lot of cake. I used bread pans to bake my cake's in and then just stacked and cut them to the size I needed.
