I need a recipe for a raspberry truffle filling that will be used with chocolate cake.It's for a bridal shower cake. The bride has not ever tasted it but she says it sounds so good that she must have it in her cake. Anyone have a recipe for this?
i've made chocolate ganache flavored with a drop of raspberry oil. I had spread a thin layer of raspberry filling on the cake. It was a hit!
Same thing happened to me (bride mentioned it and I had never made it) so I had to do some research. Here is my recipe:
Raspberry Truffle Filling
1 c. semisweet chocolate chips (I use Ghiradelli 60% cocoa baking chips)
1/4 tsp. instant coffee crystals
8 oz. cream cheese, softened
1/4 c. powdered sugar
1/3 c. seedless red raspberry preserves
Melt chocolate chips and coffee crystals together. Set aside.
Beat cream cheese until fluffy. Add powdered sugar and raspberry preserves, beating until fluffy.
Beat in chocolate/coffee mixture until blended.
