What is the best way to get and even cake when baking with a 12 inch round cake pan?
Also if I am doing a two teir cake 12 inch on bottom would a 10, 9 or 8 inch be better on top?
Bake at a lower temp than stated in recipe, use a flower nail in the middle and bake even strips around the outside for a nice even cake. (At home I bake at 320 and in the shop at 275).
Usually with tiers, I go 3 or 4 inches smaller. (You can go only 2 inches but I think it looks better with more space). That being said, I don't think a think a 9 or 10 inch for a top tier would look right, too big for a top. Even a 8 inch is kind of big but can be done. Use your cake pans flipped over to stack and see how it looks. HTH
