Hello,

Can a fondant covered cake be refrigerated? I had always thought no... but I'm hoping someone will tell me differently. Story: I am making a cake for this Saturday and made a cream cheese/whipping cream based filling, so it needs to stay refrigerated. There is too much detail to do the fondant work the day of so I really need to do it Friday (day before). How is this done normally? Please help... I really want to use this filling... it is really tasty!

I've had good and bad luck with putting fondant covered cakes in the fridge. Bad, my colors bled onto the cake one time but it was black and hot pink. Good, most of my lighter colored non-decorated cakes do just fine if I slowly bring them to room temp.
