So i bought isomalt, the mold and candy thermometer. Read the directions on how to make jewels and said i needed to use a heavy sauce pan. Im lil confused, cant i just use my regular pan? Or is it something specifically for that type of work>
Some cooking recipes call for a heavy sauce pan too. The same kind of pan should work. I just grab one of my normal cooking pans and go to it.
I think generally they just want you to avoid using a cheapo thin aluminum pan that weighs next to nothing.....sugar can be finicky and you need nice and even heat distribution when cooking it!
