I have a few recipies that say powder sugar (10x), (3x) etc. what does this mean? The 10x and 3x
It means the courseness of the grind. 10X being the finest and 3X being the standard allthough 3X seems quite low for standard.
The more finer your powdered sugar is as in 10X, the better for baking.
And, the finer the grade the smoother the icing. I tried 3x once just to try because it was cheaper, and I really could notice a difference when I used it to make royal icing. I stick with 10x.
