I just pick the flowers, gently dip them in egg white and then in PS. Let dry on a plate and then I store them in an airthigt container in a dark place. I made cupcakes yesterday and decorated them with candied violets that I picked las summer. And they looked great and tasted good

Moondance - sorry for the late reply!
I picked and candied mine during July and August 2009 and thy looked and tasted great last Sunday on my daughters birthday cupcakes. Just store them in a cool, dark place and they will last for years actually.
