I will start by apologizing if this is a duplicate thread. I searched and couldn't find where this question has been answered before.

How long can you freeze a cheesecake?

I am making the wedding cake for a friend's daughter but the groom wants cheesecake instead of a groom's cake. I will be busy baking cakes and would like to make the cheesecake in advance.

How many days can I leave it in the freezer?
How do I defrost it?
How long will it take to defrost?

He wants strawberries and chocolate drizzled on the top, should I do that before I freeze? After I take it out before it's defrosted? Or, wait until it is defrosted?

Cheese cakes freeze for a long time, as in months. I would put the strawberry and drizzle on after it's defrosted. Move it to the fridge to let it thaw.
