Can any one please tell me how to do thiis. I want to do a cake for my daughter's birthday. This cake is for Saturday. I want to do a cake with Ganache (but i dont know if it needs to be just poured over or if it needs to be beat to make it fluffy) Now i also want to cover it in fondant. When would i have to make the cake? Do I need to refrigerate it? I hope I explained my self and hope any one can help.

You don't need to beat it if you're covering with fondant. You need 2/1 ratio if covering with fondant. After the ganache has cooled just spread it on your cake. I smooth mine with a hot knife dipped in boiling water (wiped dry). Makes a nice smooth finish for your fondant.
