I've used a basic stabilized whipped cream icing recipe to cover a cake before, but I've always used butter cream to do the decorations because of it's versatility. However, the butter cream doesn't stick to the sides of the whipped cream iced cake. It slides right off and sometimes the color will bleed a little. Has anyone ever made a wedding cake completely with whipped cream icing, and do you have any tips or a better recipe? I need to be able to decorate the sides of the cakes with whipped cream.
