Actually wilton's gumpaste is ideal for roses or flowers in general. What problem are you having with it? If you insist try Nicholas Lodges recipe. The gumpaste isn't supposed to be eaten, it dries real hard too.

If you want the roses edible you could try bubble gum. There isn't a gumpaste out there that actually tastes good because you not supposed to eat it.

I use Nicholas Lodge's recipe because I don't like the odor Wilton has. Gumpaste doesn't taste good though, it's not supposed to have a flavor because it's not usually eaten. Once it gets a wire in it, for a rose for example, then it is definitely not edible. You can look in my photos, my roses are done with N Lodge's recipe and Jem quick cutters.
