Fresh Strawberry Filling...that Doesn't Need Refrigeration

Does anyone have a recipe for a fresh strawberry filling that does NOT require refrigeration? Alot of the recipes I have found require it to be refrigerated....but I don't have room to refrigerate. It is going to be in a fondant covered cake that will be out for a number of hours prior to serving.

Fresh fruit filling always requires refrigeration.

I came across one that has uses frozen strawberries, boiled down with sugar and then a cornstarch slurry added to it to thicken it. Would this still be a chunky filling or would it be smooth? The recipe says it doesn't need refrigeration.

Well, that's because it's now a cooked filling, no longer a fresh fruit filling. icon_biggrin.gif

It would be chunky. Basically sort of like Smucker's Preserves that has the pieces of whole strawberry in it. But if you wanted it to be less chunky you could either cut up or puree the fruit first.
