My absolute favorite filling that is not exactly a cream centre but is very good and popular is cooked condensed milk. I boil mine in the can but I have seen recipes where you do it in a bowl in the microwave. I have never had an issue boiling it in the can. use a very big pot put the can in and barely simmer for 3 hours, so it is "just" bubbling. it is excellent!

I was looking for the same thing last year when I was making some homemade chocolates. I couldn't find much either. The only recipe I found was much along the lines of a homemade rolled fondant recipe with different flavourings or colouring added. I didn't try it because I was looking for something a little softer and creamier.

I tried some with ganache and they are good but I am still looking for that perfect old fashioned chocolate covered cream.
