I enjoy making cakes as a hobby (and have never had any training whatsoever) and use icing paste to cover them.
Unfortunately, I often notice that soon after (within an hour or so) I have covered the cake with icing paste, the cake starts to 'weep' from one or several points around the bottom edge of the cake (i.e. where the icing meets the cake board or tray).
I was thinking that it is the humid climate but even if I leave the cake completely aired or in a room where I have a dehumidifier going on, the cake still 'weeps', at times so much that I have to wipe the little pools with a kitchen towel.
I am clueless as to why this happens and any ideas are most welcome. Thanks
I have this happen when i take a cake from the freezer and decorate it or its already been decorated and is coming out of the freezer this starts happening because as the cake thaws the moisture needs somewhere to go. The only solution ive found is either decorate it and then when it goes into the fridge it dries out. If its already decorated coming from the freezer it needs to go in the fridge for a few hours first before going straight to room temp so it has time to gradually thaw. Not sure if this is the case but hope this helps.
