yes you can use the gels, if you want to make something like water or thin decorations, such as something dripping, you can thin your butter cream with it for a thin consistancy sp, and you can us it if you want to make a transfer for a cake you put it on your design flip it over onto the cake and it will give you the lines to follow, you can see a rainbow cake on wilton page for the cake in the first class. if you read on the back of the piping get it's mostly karo syrup
