Hello,
I was wondering if anyone had a really good fondant recipe where the fondant is actually edible. I tried making MM fondant a few times but it was too sweet for my liking. Any advice would be greatly appreciated icon_smile.gif

I've tried several types fondant and my favorite is Debbie Brown's recipe. It's very soft and easy to work with (great if you're a slow decorator), and can easily be flavored. Just put in a few drops of extract (I usually use vanilla), and it tastes great. I think it's still sweet from the powdered sugar, but tastes much better with the extract.

Here's the recipe:

1 egg white made up from meringue powder
2 tbsp liquid glucose
4 1/2 cups powdered sugar
a little Crisco

Put the egg white and glucose in a bowl, using a warm spoon for the glucose.

Sift the powdered sugar into the bowl, adding a little at a time and stirring until the mixture thickens.

Turn out on to a work surface dusted with powdered sugar and knead the paste until soft, smooth and pliable. If the paste is a little dry and cracked, fold in a little vegetable fat and knead again.

Store in a ziplock bag.
