Do I Need To Refrigerate Thurs/friday's Cakes For Sun?

I am leaving Friday evening for a week's vacation in Texas! Yay...but I also have a wedding cake due for saturday...I'm crazy right? Not to mention it is going to be a 14 12 10 8 stacked buttercream cake...plus a wedding shower cake for Sunday. lol..I have never had to bake so far in advance. I normally bake friday and decorate friday night and saturday morning for a saturday evening wedding. If I bake them and ice them Thursday decorate on friday...should I refrigerate them? My mom is going to deliver them for me. They will have gumpaste flowers on both cakes, should I have my mom put the flowers on at the venue or will it be ok refrigerated? Thank you so much!!!

I never refrigerate cakes and it tends to dry them out. And I'd have mom put the gp flowers on at the site.

Great! I don't like to refridgerate them either. I just wasn't sure if it would be ok just sitting out for 2 days. I mean me and my family eat cake left out all the time. lol
