Has anyone ever made a Lemon Cake with Blueberry Buttercream filling? I had a client request this today and it sounded different to me.

I have not made a cake with combination, but I do make a lemon blueberry muffins. It is a yummy combination.

I have a client that orders the same flavor combination every time so they must love it. I think it's strange.

Strawberry cake with white chocolate BC filling and iced with vanilla BC.

Thanks for the responses. This is one that I may have to try out ahead of time - make it for the family one night icon_smile.gif Anyone have any suggestions on how to do the Blueberry Buttercream filling? Would I just ground up some fresh blueberries into vanilla buttercream?

For Easter I did a lemon WASC variatrion with blueberry cream cheese filling, it was awesome. The filling recipe I found on CC.

You can try adding blueberry jam to your buttercream.

I'd probably cook them down to a kind of coulis state then mix them, in that way you will be able to strain off the skin and get the wonderful colour and taste without having lumps in your buttercream - jkalmans smbc works great for stuff like this.

I've mixed buttercream into the blueberry filling that is sold by the sleeve. Tasted great.

You can also use Lorann's flavoring. They have a blueberry one. These are highly concentrated so only a 2-3 drops are needed. This one is tinted, but you use such a small amount it shouldn't effect your BC coloring.

I've done blue berry preserves with a lemon cake. One of my favorite pound cakes is a lemon blue berry combo.
