I'm taking on my first topsy turvy this weekend. My friend wants it to be red velvet with vanilla buttercream. I've done some searches on red velvet recipes and it seems that Cake Man Raven's is popular as well as the "tweaked" one in the recipe section. Are these sturdy enough to hold up? The topsy will only be 2 tiers.

Hi SusD

Most all Red Velvets are excellent for tier cakes. These cakes are typically very dense (heavy) and almost hold up like a pound cake. I have used the Red Velvet recipe "tweaked" as well as the Paula Deen's. One thing that I can say that helps, is to push all the air of the cake once you get it out of the oven and wrap in saran wrap and place in the refrig. over nite. This seems to tighten up the cake and make it sturdy enough to stack and place fondant on.

HTH ~
